1. In medium bowl, combind flour, salt, and baking soda.

2. In large bowl, mix butter and sugar until soft. Mix in egg and vanilla. Beat in flour mixture on low speed.

3. Seperate dough into two disks: put into fridge until firm, or overnight.

4. Preheat oven to 350° degrees Fahrenheit (180° Celsius). Flour cutting board or similar flat surface and roll dough until flat. Cut into heart shapes and put onto wax paper lined cookie trays 1 inch apart from each other. Cook until golden brown, 10 to 12 minutes.

5. Allow cookies to cool. Powder each with confectioners’ sugar. Flip half of the cookies. Spread the no powdered side with raspberry jam. Cover with another cookie.
